Dairy-Free, soy-free and cholesterol-free cheese. That description may sound heavenly to a dietitian, but not to us foodies. It doesn’t seem possible that a cheese that carries all those adjectives could taste good. But it does!
We added Daiya Cheese to our menu after tasting it at the Pizza Convention. (Now that’s heaven!) The cheese tastes great. It melts really well. And it’s almost completely non-allergenic. That’s life-changing for those dealing with food allergies. Or vegans.
I am passionate about our gluten-free menu. Using the “GREAT” program developed by the National Foundation for Celiac Awareness, we are able to safely feed those who cannot tolerate gluten. As a mother of twins, I know all to well how difficult it is for my friends who have kids with Celiac or food allergies. It’s simply unfair to these kids to not be able to eat a pizza or a slice of cake at a birthday party because it’s not safe. Traveling to birthday parties with your own food is not fun. Our gluten-free menu brings the fun back to all those who used to worry about safe food at birthday parties. It made real sense to add Daiya to our menu. It is a delicious addition to the Fresh Brothers family.
Before we added Daiya to the menu, our sauce contained a small amount of Parmesan Cheese. We wanted to offer a truly vegan pizza to our customers so we removed the cheese from the sauce. (No one could tell the difference!) We typically use butter on the deep dish pans, but we’ll make it without butter if you ask us to do that.
I frequently host tastings for gluten-free support groups. I had guest who couldn’t eat cheese so she asked me to make her a cheeseless pie. Instead, I made her a gluten-free pizza with the Daiya Cheese. Through her tears and a full-mouth smile, I could tell that she was a happy camper.
Daiya Cheese is now widely available at most grocery stores. In Southern California, you can find it at Whole Foods and Ralphs.
Recently, Quarrygirl.com, a vegan blogger, called our vegan pizza “bloody fantastic.”
