Fresh Brothers Launches New Skinny Crust: Half the Dough, Half the Carbs

Starting today, Fresh Brothers rolls out a new pizza crust.

The skinny crust is just that. Skinny. A wafer-thin crust, piled with Fresh Brothers’ toppings, for a whole new kind of taste.

“The skinny crust rocks. Half the dough, half the carbs, and totally delicious,” said Adam Goldberg, Fresh Brothers Founder & CEO.

This skinny crust began as something the brothers would cook for themselves. “My brother Scott would roll out half the dough of a regular pizza crust, and we’d load it up with our favorite toppings, just for ourselves,” says Adam. “Pretty soon, we got to thinking: people would love this as much as we do.”

Of course, it wasn’t quite that easy. “It took us a few months to get it just right. We take a lot of pride in our pizza, and we weren’t going to put it in front of our customers until it was perfect.”

So far, customers who’ve had a sneak peek (make that a sneak bite) have given it rave reviews.

The crust comes out crispy, a bit crunchy, but still something you can sink your teeth into. “We don’t change the amount of toppings,” says Goldberg. “So if you order Da Works with a skinny crust, you get exactly the same amount of toppings. The only thing that’s different is the crust. But that makes a huge difference, and the total taste is fantastic.”

The skinny crust fits perfectly into Fresh Brothers menu. “We have our Chicago-style Deep Dish, which is a very hefty pizza. Our thin crust is something that everyone loves. And now the skinny crust—a little lighter, but still satisfying.  If you’ve made a resolution to cut your carb intake, this is the pizza for you. It’s got half the carbs, and all the taste.”

Adam and Debbie Goldberg opened the first Fresh Brothers in 2008. The idea: To take their traditional Chicago-style family recipes, originally created by Adam’s older brother, Scott Goldberg, and give them a fresh California twist. Their dough is hand-tossed, their sauce a secret blend of spices shipped in from Chicago. The mozzarella is made specifically for pizza, and is some of the best in the country.  Their wings are baked, never fried. Their salads are hand-chopped and hand-tossed, with over 40 ingredients to choose from, plus 19 different dressings. Fresh Brothers also offers a gluten-free and vegan menu, which was developed using a training program by National Foundation for Celiac Awareness.

Fresh Brothers has 8 locations in and around Los Angeles, including their newest at 1447 Lincoln Blvd, at Broadway, in Santa Monica. In addition to their legions of fans, they’ve also garnered a number of national accolades, most recently Pizza Today’s “Independent Pizzeria of the 2012.” Late last year, they shot up to at #16 on PizzaMarketplace.com’s “2012 Top 100 Movers & Shakers.”

We are thrilled to announce that Fresh Brothers is one of 2012 Red Tricycle’s Totally Awesome Awards finalists! Over 15,000 moms and dads nominated their favorite local businesses and products.  We were nominated as one of the “Most Awesome Best Eats.”

Here at Fresh Brothers, it’s our mission to make dining with your kids fun and delicious.

On Tuesdays, we host a Kids Club at our Fresh Brothers Redondo Beach location.  Kids can have their faces painted, create pizza art and have some wiggly fun with My Gym

At each of our stores, we have televisions tuned to children’s programming.

We like to hand out pizza dough for the kids to play with at each store and there are always lots of balloons floating around.

We even created the “Fresh Kids Special,” the pizza sauce that has veggies hidden in it.  Kids don’t know it’s there, but moms and dads do!

Fresh Brothers named Pizza Today’s “Independent Pizzeria of the Year”

We are so excited to tell you that Fresh Brothers has been named “Independent Pizzeria of the Year” by industry trade magazine, “Pizza Today.”  Here are some details recently published in our press release:

“We selected Fresh Brothers as our 2012 Independent of the Year based on the company’s successful execution of sound marketing strategies and its commitment to actively engaging its local community,” says Jeremy White, editor-in-chief of “Pizza Today. “

Founded four years ago in 2008 by Adam & Debbie Goldberg, Fresh Brothers has quickly grown to be a household name in Los Angeles. Together with Adam’s brother Michael, they have grown the business to six Fresh Brothers units, which feature dine-in, take-out and pizza delivery.  Two more units are currently under construction in Brentwood and Santa Monica, and are slated to open this year.

Fresh Brothers also recently received an equity investment from Michael Greenberg, co-founder and president of Manhattan Beach-based shoe company Skechers USA, Inc.  Greenberg’s investment, which was in the millions, will help accelerate growth as the company aims to increase to 100+ units.

In other words, we have lots of great stuff going on here at Fresh Brothers.   Our Brentwood location, which will be pick-up and delivery only, is slated to open in late August.

Our Santa Monica location should open in mid-October.

Matzah Pizza is here for Passover

The Fresh Brothers family is excited to announce that we have added Matzah Pizza to our menu for the duration of Passover.

We’ve had an amazing response from our customers about the Matzah Pizza.  Two Rabbis have called us to thank us for doing this for the Jewish community.  On Sunday, we had a guy at our Calabasas store eat 5 of the pizzas by himself!  Another family in Beverly Hills ordered ten of them to go so they could feed their entire family.

Fresh Knots: A Fresh Twist on Garlic Bread from Fresh Brothers

On Friday, January 27th, Fresh Brothers introduced a new menu item – Fresh Knots – a fresh twist on garlic bread.  To celebrate the new product launch, Fresh Brothers sent out 10,000 samples of Fresh Knots to customers all weekend, for FREE!

They look incredible, don’t they?  Fresh Knots are light, crispy and deliciously chewy.

Made from our freshly made pizza dough, Fresh Knots are tied up into tiny bundles and baked.

The Fresh Knots are then cooked until they are golden brown.  The Knots are then dusted with Parmesan cheese and served with a side of pizza sauce.

Customers who placed orders for pizza, salad or wings, where treated to surprise samples of the Fresh Knots.

Adam Goldberg, CEO & Founder of Fresh Brothers, worked with his brother, Michael Goldberg, COO, to help expedite the free sample promotion.
